The Gluten Free Bakery Story

The thing I missed most wasn't cake, or pasta, or pizza. It was bread. Real, crusty, tear-into-it bread. The kind of loaf that turns lunch into something to look forward to.
When I was diagnosed with coeliac disease in 2012, the relief of finally understanding why I'd felt foggy, tired and unwell for years came with a quiet loss. Every gluten-free loaf I tried was dry, crumbly, and a bit sad. The bread bin stopped being a happy part of the kitchen. I'd buy a loaf full of hope, and quietly throw most of it away.

I didn't want to give up on bread. I wanted the kind I'd grown up with, a proper crust, a soft, open crumb, that tang that only sourdough has. So my friend and fellow foodie Alexander and I teamed up on a stubborn little mission: bake the gluten-free loaf I actually wanted to eat.
That meant doing it the slow way. Real sourdough, fermented for hours, made by hand. Ancient grains, responsibly sourced. No ultra-processed shortcuts. Nothing dry, nothing crumbly, nothing sad.
It took a lot of failed loaves to get there.
Today we bake 100% gluten-free sourdough by hand in our South London kitchen. Every loaf is slow-fermented to develop the depth, tang and crust that make sourdough what it is. Everything we make is free from 14 allergens and plant-based, because we wanted our bread to be welcome at as many tables as possible.
We bake fresh to order rather than holding stock in a warehouse, which is why your delivery takes a few days, and why it arrives at its absolute best.
What started in a small kitchen now reaches gluten-free households up and down the country.
